Rocky road brownies

225g of milk chocolate, roughly chopped
1/2 cup of unsalted butter
2 eggs
1/2 cup of brown sugar
a pinch of salt
1/2 cup of unbleached all-purpose flour
3/4 cup of cashews, toasted and roughly chopped

1 cup of mini marshmallows

1. Preheat the over to 350 F and put the rack in the middle. In a 8 inch square baking dish, put a parchment paper (letting the paper hang over the two sides) and butter the two other sides.

2. In a bowl, melt the chocolate and the butter, and let it cool.

3. In another bowl, beat the eggs, the brown sugar and the salt together with an electric mixer until the texture is smooth. At low speed, add the chocolate mixture and the flour – beat everything until it is smooth.

4. With a spatula, add half of the nuts and half of the marshmallows.

5. Put the dough in the baking pan and bake it for 35 minutes (or until a toothpick inserted in the center of the cake comes out with lumps and not completely clean).

6. Right out of the oven, sprinkle the rest of the nuts and marshmallows. Let cool.
7. Drizzle the slightly cool caramel sauce over the cool brownies.

8. Serve warm or at room temperature and enjoy with a big glass of milk!
